Over the weekend, I had two soccer games, one home and one away. Since I had a game on Saturday and Sunday, my coach told us to not eat any unhealthy foods that might alter our energy and set us up for a bad performance during the game, so I spend my weekend eating complex carbohydrates, fruits and vegetables. After my game on Sunday, I started thinking about what desserts I might want when I get home since I didn't have to worry about what I ate. My mind filled with delicious treats like cookies and cupcakes, but then my friend offered the idea of Snickerdoodle Donut Muffins.The idea seemed amazing since it combined three of my favorite treats. To my surprise, this was quite honestly one of the easiest desserts I had ever made, and would recommend it to everyone and anyone. Oh, and this recipe does not call for eggs! So anyone with and egg allergy is free to enjoy!
Ingredients:
1/2 cup sugar
1/4 cup melted butter
3/4 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup flour
Preheat oven to 375 degrees Fahrenheit.
Grease cupcake tray.
Mix together the sugar, butter, and nutmeg. Then, add the milk. Slowly add the baking powder and flour until the consistency is similar to a donut batter, not too runny and not too stiff. After that, fill the cupcake tray and place in the oven for 15-20 minutes.
Coating Ingredients:
1/4 cup melted butter
1/2 cup sugar
1 teaspoon cinnamon
When the donut/ muffin is ready and out of the oven, quickly coat them with the melted butter and roll them in the cinnamon/ sugar creation. The butter will act as a glue for the snickerdoodle topping and finish off your lovely dessert! I would recommend pairing this delicacy with some milk for a delicious morning or night treat! Enjoy!
